How to make a classic chicken and leek pie

Chicken and leek pie is a great classic and very easy to make with only a few ingredients!

Whether you're cooking for a quick weeknight dinner or a cosy weekend meal, this easy-to-follow recipe requires only a few simple ingredients with plenty of options for personal touches, making it a staple for any kitchen.

Ingredients:

Water

(Optional) Turmeric

1 Entire Leek (chopped)

Diced chicken (We used chicken thighs)

1 Clove of Garlic (chopped)

Olive oil

Plain Flour

Salt and Seasonings of your choice!

Steps:

  1. Preheat the oven to 200°C

  2. Grease a pan with olive oil and add in the chopped garlic - stir until golden

  3. Add the chopped leek and diced chicken - stir together for a few minutes then let sit. Cover the pan with a lid to let the steam help cook the chicken. Add salt (and any seasoning) to taste.

  4. (Optional - this is not necessary for the recipe and should be added only at your discretion) We added a little zero-alcohol beer for additional flavour

For the dough

  1. Mix together flour, turmeric (optional - adds colour and flavour), then gradually add water until a doughy consistency is reached

  2. Flour a clean surface and start kneading the dough - once ready, split into two balls.

  3. Flatten one of the dough balls and roll into a circle - this will make the base of the pie. Place at the bottom of a round tin (e.g. springform tin), ensuring the entire bottom is covered.

  4. With the rest of the dough, roll out into a long strip - this will make up the edge and top of the pie. Line the edge of the tin with the dough

  5. Pour the chicken and leek mix into the tin and cover the top with the rest of the dough. Use a fork to poke holes in the dough to allow the pie to cook better

  6. Bake in the preheated oven (at 200°C) for 30 minutes.

  7. Leave to cool slightly before serving. Enjoy!
