Ingredients:
250g of oats
1 tsp of cornflour (can be substituted for 1 tsp of rice or tapioca flour)
70ml of water
30ml sunflower oil
60ml maple syrup
30ml of honey (or agave syrup)
Optional:
Spices (we added cinnamon and ginger)
Cocoa powder
Toppings (try adding your favourite nuts or raisins, or go nut free! - we added pistacchio, almond, cashew, walnut and raisins)
Steps:
1. Preheat the oven to 140-160°C. Line a wide baking tray with baking paper.
2. Measure out 50g of oats and blend - add to the remaining 200g of oats. This will make the granola more cohesive.
3. (Optional) Add your chosen nuts and berries mix
4. Add one teaspoon of corn flour (alternatively you can use tapioca or rice flour), and mix
5. In a pan, mix together 60-70ml of water, 30ml of sunflower oil, 60ml maple syrup and 30ml honey (or agave syrup). You can also add any spices at this point - we added cinnamon and ginger
6. Place the pan over heat and stir occasionally until the mixture starts to bubble - once bubbling, take the pan off the heat and pour over the granola whilst still hot
7. Mix the syrup into the granola well, then pour onto the lined baking tray - spread evenly
8. Place the tray into the preheated oven and bake for 10-15 minutes, taking the tray out halfway to stir the granola
9. Place aside to cool before serving or storing!
